Avocado Salad

 

Makes 2 Servings; Vegan Recipe

 

Ingredients:

 

– 2 avocados – peeled, pitted and diced

– 4 green onions, sliced

– 1 large bell pepper, diced

– 1 large ripe tomato, diced

– 1/4 cup chopped fresh cilantro

– 1/2 lime, juiced

– Salt and pepper to taste

– Vegan Feta cheese (Optional) 

 

Directions:

 

In a medium bowl, combine avocados, green onions, bell pepper, tomato, cilantro and lime juice. Gently toss until evenly coated. Season with salt and pepper to taste. Enjoy!
